Chocolate and Coconut One-Minute Muffin

Broady’s take on chocolate and coconut muffins. This is the guilt-free, low carb, super healthy version, so don’t be afraid to indulge anytime you’re craving something yummy!

Ingredients:

1/4 cup Ground Flax Seeds
1 Whole Egg
1/2 tsp Baking Powder
1/2 tsp Coconut Oil (may be replaced with a few drops of coconut essence for lower fat totals)
1.5 pkts Splenda
1 Tbsp Sugar-Free Cocoa Powder

Directions:

Combine all together in a bowl, pour into a coffee cup and microwave for approx 65 sec. Top with cream cheese or cottage cheese, and enjoy!

    I am a sweet tooth so you may find you only need 1. I have so many 1/2 packets of splenda in my cupboard

    Hot for teach- the recipe would still work fine with sugar but it would just mean it wast low carb anymore. Have you tried different types of sweetner eg stevia, splenda etc. You could also try the recipe without any sweetner and see how you like it or use 1 tsp low sugar jam as a replacement.Hope that helps

    Sondra- I get my coconut oil from the local health food shop. I buy the organic one so its a little costlier but it lasts for ages. Its a solid at room temp and then becomes a liquid when its heated.

    These sound wonderful! A few days ago, I mixed 1 scoop of protein powder with a half cup of nonfat yogurt, and it was the exact consistency of frosting. I am going to try it out on these muffins.

    Woohoo I so need to make these tonight. On those macros most of that should be fiber due to the flax. What 1 or 2 is not net from Coco and splenda?

    One of the nicest (and quickest) chocolatey treats!!! I added 1 square of 99% chocolate in the centre of the mixture before cooking for a gooey, bitter chocolate centre :)

    Just thought I’d let you know that I modified the recipe a little bit further by adding a small amount of natural crunchy peanut butter to the middle, along with the bitter dark chocolate…truly scrummy!!! :D And if you put it in a cup-cake and bake it for 10 minutes it turns out a little more moist than when cooked in the microwave…either way YUM!!
