I love mixing protein powder in pumpkin for a treat. I also like pp with Greek yogurt and pumpkin!

i just have so many )

ok heres what i had for breakfast today

Pumpkin Low Carb Protein pancake

1/4 cup pumpkin
2 tabelspoons flax
3 egg whites
1 scoop prtoein powder ( i used cinnamon )
stevia, pumpkin pie spice to taste
pinch of baking powder
capella ( if u have them)

blend and cook like a pancake

you can also make almost an identical recipe in a mini pie pan and pake it in the over at 350 for a pumpkin pie !

Chocolate Pumpkin Butterfinger Pancake
1/2 cup oats
1/2 cup egg whites
1/3 cup pumpkin
Stevia or Splenda to taste
Pumpkin pie spice to taste
½ tsp Baking Powder
½- 1 scoop chocolate protein powder
1/4 cup fat free cottage cheese (optional, if you eat dairy it gives it an awesome texture and increases protein but can be made without it)
Blend and cook like normal pancake. When it's almost done spread 1 tablespoon of PB or almond butter over the top and let it melt.

Low Carb Pumpkin Protein Loaf / Muffins
1/2 cup pumpkin
1.5 scoop vanilla protein (or chocolate if you like the choc/pumpkin combo)
1/2 cup egg whites
Cinnamon or Pumpkin Pie Spice to taste
1 tspVanilla
Stevia or Splenda
½ tsp Baking Powder
Blend together and bake at 350 in either muffin tins or a mini loaf pan. Good with chocolate protein. Kind of a mini chocolate cake! Awesome topped with any nut butter

Pumpkin Pie Oatmeal
½ Cup Oats
Water
Stevia/Splenda to taste
Vanilla Extract to taste
Pumpkin Pie Spice to taste
¼ cup canned pumpkin
½ Scoop Vanilla or Cinnamon Protein Powder
Almonds
Cook oats in microwave with water. Stir in Protein powder, sweetener, extract, pumpkin, and pumpkin pie spice. Top with almonds and sugar free maple syrup.

MMMMMMMMMMMMMMMMMMMMMM they all look soo good. I can't wait to try them..I might start with the oats first!

last night I slowed cooked bite size pumpkin pieces in coconut milk with a Tablespoon of yellow curry paste. it was so delish. felt like I was in thailand
