This is so good that I'm actually writing this as I eat it... couldn't wait!!
100g low fat natural cottage cheese
2 egg whites
100g fresh blueberries
1.blend the cottage cheese until smooth (fyi- at this stage it's like philadelphia- maybe a good future spread?!!)
2.whip the whites until stiff
3.fold cheese into whites
4.fold in blueberries
5.microwave for 4 minutes (in one minute intervals- don't open the door!)
6.brown for 2-3 mins under a hot grill

i only added the blueberries today, usually do this as just cottage cheese and whites. but they are yum! the only downer is excess fluid in the bottom from heating the cottage cheese, but i was gross and slurped it up 'cos i strangely like it...
for savoury, it'd be good with sliced leeks i reckon!
