Thumbs up Homemade Granola Experiment (Stevia)

It's in the oven now, so we'll see... (it smells divine!)
But here's what I did!

Preheat oven to 375* (I have a "speedbake" setting that I did use, I suppose it's like convection?!??!)

In a BIG bowl, beat three egg whites until frothy.
Add .5 tsp Vanilla extract
.5 tsp Almond extract
2 Tbsp Cinnamon (saigon if you have it!)
1 tsp salt
3/4 tsp ginger
Sweetener to taste (I did 1.5 tsp liquid stevia)
2 cups wheat bran
1 cup old fashioned oats
1 cup rolled oats
3 Tbsp water

Pour onto a cookie/baking sheet sprayed with Pam or greased with coconut oil.
Bake for 25 minutes, stirring every 5-7 minutes.

OH! I did this WITHOUT any fat because I wanted it for Pro/Carb meals. If you wanted all three macros, I am sure it would be great with coconut oil, organic butter, or your oil of choice!

Would be great with some chopped almonds/pecans/walnuts baked in.
