it is delicious
used up the other half of the mozzarella tonight:
1 small courgette
1 beef tomato
1/2 reduced fat mozzarella ball
1. slice the courgette into long 0.5cm thick pieces.
2. slice the tomato into rounds.
3. slice the mozzarella into strips.
4. layer in an oven-proof bowl: tomato, courgette, mozzarella. make sure the final layer is cheese!
5. bake with a foil lid for as long as you want (i forgot about it...so 45 minutes later!) and remove the lid for the last 5 minutes.
6. serve (maybe drain off excess fluid) or eat from the bowl!
7. sit back with a smiley face that you just ate such a yummy meal!
