Default Cleaned up Pizza

Base:
Whole wheat flour
Gram (chickpea) flour

Topping:
1/2 reduced fat mozzarella ball
tomatoes
spinach

Method:
1. To make the base, mix some whole wheat flour and gram flour (I used about 80:20 ratio) with some water until it forms a non-sticky ball. Roll out on a floured surface to your desired thickness.
2. In the meantime, microwave the tomatoes (or just use sieved I guess) until mushy and pass throuh a sieve so they aren't to liquid. Also cook the spinach.
3. Preheat the grill and grill one side of the base on a non-stick tray.
4. Spread the tomatoes over the un-grilled side. Top with the spinach and mozzarella.
5. Grill until the cheese is bubbling.
6. Enjoy!

Yummy and no butter in the base or yeast
Would probably be eeeeven better with some Lea and Perrins

used up the other half of the mozzarella tonight:

1 small courgette
1 beef tomato
1/2 reduced fat mozzarella ball

1. slice the courgette into long 0.5cm thick pieces.
2. slice the tomato into rounds.
3. slice the mozzarella into strips.
4. layer in an oven-proof bowl: tomato, courgette, mozzarella. make sure the final layer is cheese!
5. bake with a foil lid for as long as you want (i forgot about it...so 45 minutes later!) and remove the lid for the last 5 minutes.
6. serve (maybe drain off excess fluid) or eat from the bowl!
7. sit back with a smiley face that you just ate such a yummy meal!
