Default Experimenting with low-carb cheesecakes...

So ladies, I've been experimenting... and thought I'd share my efforts...

1) This one is to die for:

1 sachet unflavoured gelatine
2 tsps no-added sugar cocoa powder
1 1/2 scoops vanilla protein powder
1 egg white
1 small tub fat-free cream cheese
(optional) handful brazil nuts
1 tbsp splenda

First, mix gelatine in 2 tbsps water and leave to solidify for a few minutes. Meanwhile, put egg-white, protein powder, cocoa, splenda and cream cheese in blender. Add gelatine mixture. Puree. I then added a few brazil nuts in as well. I then poured it into two martini glasses, decorated with a few broken brazil nuts and refrigerated all day - and I just ate one, it was AMAZING!!! Now what I really need for this is a very low-calorie crust and it could be a real cheesecake... any ideas? Don't really want to use nuts and butter, as it would add too many calories...

2) This one I haven't tried yet, it's setting in the fridge. I want to get calories down, ya see:

1 packet sugar-free cherry jello
2 tsps no-added-sugar cocoa powder
1/2 tub fat-free cream cheese

mix the jello with 1 cup boiling water as directed on the packet. Then put in blender with cocoa powder and cream cheese. Puree, pour into glass, refrigerate. I'm thinking it'll be a bit like a black forest gateau type thing.

Hope this gives people some ideas! It's all about the innocent desserts!
