This is a discussion on Amazingly Fluffy Biscuits (Low Carb) within the Recipes forums,----- I made these biscuits (yes I said biscuits- GASP!!). They were so delish!! And the carb for one is 2.5 ...
1. Cut cold butter into dry ingredients with the tines of your fork, rotating the bowl around with your other hand until the mixture has pea-sized chunks throughout. You could also use a pastry blender, in which case you probably don't need to read these instructions.
2. Chill mixture in the fridge for 5-10 minutes or as long as you can stand it. The longer the better. The more the fat can get cold and hard, the puffier your biscuits will be. Remember that!
3. Whisk egg whites with a fork in a bowl for 20 seconds, until no longer stringy and gloopy. You just want 'em a little foamy. Now mix egg whites into dry mixture. The dough will be runny.
4. Pour into well greased muffin tins. Make sure you grease the tops of the pan as they will rise a good bit. Cook at 400 F for 12-15 minutes. This makes 4 muffins. One is enough to satisfy you.
Looks yummy! Do they hold up well, like if you put a sauce on them, or do they get super mushy?
Yes they are just like a regular biscuit. It's so amazing!! You could even make a biscuit sandwich out of them with egg or turkey sausage. They are amazing!

Can't wait to try these - I love using Almond Meal/Flour!! Thinking maybe coconut oil would work since it is a solid.... then it's healthier fat. Going to try... we shall see???

almond meal... in the UK is that ground almonds? I keep hearing great things about it for protein diets but can'[t help but associate it with gorgeous (but waist busting) bakewell tarts...
I just made these, and they are amazing! Thank you sooooo much for this recipe. I made a turkey sausage and egg sandwich with one, and it felt like such a huge cheat. YUM!
Did you ladies use packaged whites or just from eggs in a carton? I wouldn't think there would be a huge difference, but I thought I'd ask.
I used packaged whites. I wonder if there might not be a slight difference between the packaged and the separated egg. I will try them with fresh eggs next time and see.

I used liquid egg whites from the carton. I'm so glad you enjoyed!

Yup.. it is ground up almonds. You can actually make it yourself using a food processor or coffee grinder. Just grind it into a fine meal. But be careful cause it can turn to almond butter if you mix it too long. IT's got lots of protein in it.
I made these biscuits using Cocnut Oil instead of butter and they turned out delish!!! Keep in mind they are not sweet at all - they are biscuits. They would be awesome with an egg or any way you prefer a breafast sandwhich. I had one with honey on it which was tasty and one with a clean sort of hotdish over it. Lean ground beef, spinach, peppers, onions and diced canned tomatoes with tomatoe juice as the sauce. VERY GOOD!
Followed the recipe exact as above but replaced the butter with Coconut Oil.
I am def going to try this with the coconut oil!! I guess I know what I'm doing tonight! Playing Betty homemaker! lol Yours looks great!!
