Default Super Easy Ice Cream

Mix a scoop of protein powder into a half cup of coconut milk. Freeze it for twenty minutes or so. I used vanilla, and it tasted just like vanilla soft serve. I can't wait to try CHOCOLATE!

It's almost like the real thing. I don't freeze it hard, so it may change if you do. I get it to a soft serve consistency, and it is fantastic. It prevented me from going and buying a pint of Ben and Jerry's, lol. The chocolate is really good, too, but I like the vanilla better.

Oh my God!!! Made this last night and it was absolutely AMAZING! I put a few chopped walnuts on top and felt like I was having an ice cream sundae!

Then, this morning, I looked up how many calories were in a 1/2 cup of coconut milk and almost cried! :( 233cal! That, along with the scoop of protein powder brought my healthy ice cream before bed up to a whopping 350 cal!!!!!

Guess I won't be doing that too much.....but so yummy!

Whoa! That's a lot! Check out some different brands. The one is use only has 90 calories per half cup. I checked the label, and it's water with 35% coconut milk. It still comes out delicious.

I use Bright. I get it at my local farmer's market. It's cheap too. It's certified organic and only 99 cents per can.

Yeah! Found some Lite Coconut Milk at Traders Joe's! 50 cal per 1/3 cup....that is doable!

Well, good to know. I have found that 20 minutes is a bit too short (the ends get nice and firm but the middle is soupy) so I will try about an hour or a bit less and see if that is better.

Thanks for the tip on the overnight thing - don't need to chip a tooth on this new heavenly treat!!!!
