I actually LOATHE dried fruit...but I made this last night for some family with curried chicky breast and green salads and it was PHENOMENAL!
Veggie Curry
1 T organic GF Butter
2 cups 1/2 inch diced sweet taters
2 cups cauliflower florets
1.5 tsp curry powder
1 fuji apple, diced
1/2 cup water
1/4 cup raisins
1 chicky bouillon cube
(I didn't, but I would add sweet onion next time!)
Wash all produce. Melt butter in a large skillet over medium low heat. Add Sweet tater and cauli. Cook, stirring often, 5 minutes. Add curry powder, stir for 30 seconds. Add apple, water, raisins, and chicky bouillon. Bring to a boil. Cover, reduce heat to low and simmer 10-15 minutes, until veggies are tender, adding more water if necessary.
