Girls, this is amazing...and sooo diet-friendly, too! Definitely a yummy dinner recipe, I've made it a couple times this week already
It was a stroke of genius

I had this crazy craving for potato pancakes, and came up with this instead.
Pancake ingredients:
-150 grams of zucchini, grated
-1 tbsp. of parmesan cheese
-1 egg
-1 egg white
-salt
-pepper
Sauce ingredients:
-100 grams of extra lean ground beef (turkey and chicken work as well)
-3/4 cup of tomato sauce (PLAIN, no sugar added)
-Italian spices
-20 grams of onion, chopped finely
-2 tbsp. of mushrooms, chopped (optional)
Pancake Directions:
1) Place the shredded zucchini on paper towels and squeeze to remove as much water as possible.
2) Whip the eggs together with a dash of salt and pepper (to taste) and then fold in the drained zucchini. Mix in the parmesan.
3) Spray a pan with non-stick cooking spray, and put a dollop of the mixture in the middle.
NOTE: It'll appear as if it's not holding together at first but DON'T WORRY!! As soon as it's cooked a little through, the egg and egg white do a great job at binding the mixture.
4) Cook just like pancakes on medium heat, making sure to let the mixture rest long enough before flipping to the other side (just like any other pancakes!)
NOTE: You could add bread crumbs or oat flour to the mixture if you can afford the extra carbs! It gives it a nice touch as well!
Sauce directions:
1) Brown the meat, mushrooms (if using) and onion in a pot. Add the tomato sauce and spices, and cook over low heat. (like a spaghetti sauce!)
2) Spoon tomato mixture over the pancakes and serve hot.
One word: DEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEELISH!!!
