I was playing around with the one-minute chocolate-coconut muffin recipe from this site and came up with this variation. I thought it was delicious and tasted like a guilty treat!
15g (1/2 scoop) Vanilla Protein powder
1 tsp baking powder
4 tbsp flax seeds
1 tsp cinnamon
mix dry ingredients together in a big mug, then add:
1/2c egg whites
1 tbsp Walden Farms apple butter
2 tbsp DaVinci caramel syrup
Watch this in the microwave! I had to stop @ 30secs and stir as it was growing huge!
