I made this up when I grew tired of egg whites for breakfast. It is now something I eat at least 3 mornings a week.
Preheat oven for 400 degrees
9-10 egg whites, whipped
Pumpkin spice to taste
2 tsp vanilla extract
1 can organic pumpkin (can use sweet pots or butternut squash as well)
Blend well (may want to pulse in food processor).
Prepare baking dish with cooking spray. Pour into dish and bake for 30 min.
Sometimes I top it with pecans.
It is not sweet, so if you want a sweet breakfast, add your own sweetener. I am sure raw honey would be excellent.
It usually lasts me 3 servings.
