Default Sugar Free Fudge

Just saw the thread asking for chocolate craving killers, here is mine. It's sugar free fudge, but has fat, so I don't make this every day but I do make it at least once a week.

You'll need a package of bitter chocolate, 100% chocolate kind that's sugar-free (mine comes in squares but I also use the round kind sometimes. It's about 2.5-3 ounces).

Package of low fat cream cheese (pretty sure this is one pound).

Big handful of pecans

Some vanilla extract

A little bit over half a cup of granular Splenda

First, melt the cream cheese (I let it sit out for an hour or so to soften up, in a bowl. Spray a ceramic pan with Pam so you have someplace to put the fudge. You'll need to melt the chocolate squares (I do this in the microwave or you can do it in a pan or water bath), then in a bowl, combine the soft cream cheese with the chocolate, vanilla and splenda and mix with blender until it's super smooth. After that, add the pecans and mix so it's evenly distributed.

Then all you have to do is put it all into the ceramic pan (don't forget to spray first!), smooth it evenly, cover it with foil or plastic wrap, and refrigerate for at least 3 hours (you can do this at night for next day, that's what I usually do). After it's hardened, you can cut it into squares. It's yummy!!!
