Waist-Friendly Pancakes
Low carbing or not, we all crave thick, moist pancakes now and again. Here’s a recipe you can make any time!

Ingredients:
- 1/2 cup almond flour
- 2 packets Stevia
- 2 eggs — beaten
- 1/3 cup seltzer water
- 1 Tablespoon heavy cream
- 1/4 teaspoon salt
- dash of cinnamon
Directions:
Combine all ingredients, blend well, and cook on a hot griddle or skillet sprayed with Pam.
Serve with sugar free syrup, some berries, and/or a bit of Cool Whip on top.

Carb: 7g
Fiber: 4g

Almond flour, perfect! I know just where to get some.
where would I find some almond flour?? and I have stevia..but its not in a packet..do you know how many grams are in two packets of stevia?? I could use my scale to measure

Hey Alphie, you can get almond flour at most health food stores. If you can’t find it, you can always make your own–just use a food processor and “pulse” raw almonds in there to the right consistency (just don’t overdo it, because then you’ll end up with almond butter…lol).
As for the Stevia you have, just add a couple of teaspoons (it’s hard to say because if you use too much of certain brands, it’ll end up tasting bitter–but you know what yours is like, so you can sort of add as much as you think would work for two servings).

You keep this premade for a few days in the fride in a squeeze bottle so it’s ready to get to cooking in the am.
